Choc-Chip Flapjacks (makes 12)



1 cup cake flour / HCW Gluten-Free Flour Mix

4 tbsp HCW Just Whey

2 tbsp sugar / xylitol

2 tsp baking powder

¼ tsp salt

1 cup milk

2 large eggs, separated

3 tbsp butter, melted

¼ cup HCW Cacao Nibs, organic

Oil for frying



  1. Combine the dry ingredients well.
  2. In a separate bowl, mix together the milk, egg yolks and butter. Add to flour mixture, whisking until smooth.
  3. Beat egg whites until stiff. Fold into batter, together with the cacao nibs.
  4. Heat the oil in a pan, spoon batter into hot pan and cook on both sides until golden brown.
