Ingredients:
- 1 cup HCW Pitted Dates
- ½ cup boiling water
- 1 tbsp cocoa or cacao powder
- 100 ml coconut milk, warmed
- Pinch of salt
- To serve: cacao nibs (optional)
- Add dates to a mixing bowl and cover with boiling water. Add a pinch of salt, cover and allow to stand for 5 minutes, or until the dates have softened completely.
- Pour the dates and their soaking water into a blender, then add the warm coconut milk and cocoa or cacao powder.
- Blend on high until the mixture is smooth and fully combined. If the mixture becomes too thick and sticky, add more warmed coconut milk or boiling water to thin.
- Spoon the gooey mixture into ramekins a sprinkle with cacao nibs to serve.
