Serves 1 – 2
Ingredients:
- 400g cooked black beans
- 1 large tomato, roughly chopped
- ¼ red onion, roughly chopped
- 1 avocado, sliced
- 50g feta cheese, cut into chunks
For the chimichurri:
- Large handful coriander
- large handful parsley
- 2 tbsp white wine vinegar
- 3 tbsp extra virgin olive oil
- 1 garlic clove, roughly chopped
- ¼ tsp dried chilli flakes
- ¼ tsp ground cumin
- 1 tbsp Nutritional Yeast Powder
Method:
- Add all the chimichurri ingredients to a blender and pulse until well combined
- Combine the remaining ingredients in a serving bowl, reserving the avocado slices.
- Add the chimichurri paste to the bowl and mix
- Season to taste and top with the avocado slices.
