Black Bean Chimichurri Salad

Serves 1 – 2 

Ingredients: 

  • 400g cooked black beans
  • 1 large tomato, roughly chopped
  • ¼ red onion, roughly chopped
  • 1 avocado, sliced
  • 50g feta cheese, cut into chunks

For the chimichurri:

  • Large handful coriander
  • large handful parsley
  • 2 tbsp white wine vinegar
  • 3 tbsp extra virgin olive oil
  • 1 garlic clove, roughly chopped
  • ¼ tsp dried chilli flakes
  • ¼ tsp ground cumin
  • 1 tbsp Nutritional Yeast Powder

Method: 

  1. Add all the chimichurri ingredients to a blender and pulse until well combined
  2. Combine the remaining ingredients in a serving bowl, reserving the avocado slices.
  3. Add the chimichurri paste to the bowl and mix
  4. Season to taste and top with the avocado slices.
