Naturally gluten-free, full of fibre, moist and utterly delicious.
Ingredients:
- 3 cups HCW almond flour
- oil for greasing
- 3 eggs, beaten
- 1 tablespoon HCW apple cider vinegar
- 3 over-ripe bananas, mashed
- ¼ cup coconut oil, melted
- 1 Tablespoon of honey (optional)
- 1 teaspoon vanilla extract
- ¾ teaspoon baking powder
- ½ teaspoon salt
- Preheat oven to 150 C. Grease a standard bread pan.
- Mix the beaten eggs and vinegar together in a bowl
- Add mashed bananas, coconut oil, honey, and vanilla extract and stir until combined.
- Mix Almond Flour, baking powder and salt together in a large bowl; tip into the banana mixture and stir until well blended.
- Pour your batter into the greased bread pan.
- Bake in the preheated oven until a knife inserted into the center comes out clean, about 55 – 60 minutes. Cool in the pan for 10 minutes before removing to cool completely on a wire rack.
