Toffee Rawnola Crumble

Toffee Rawnola
Ingredients: 
  • 1 1/2 cups of HCW pitted dates
  • 1 tbsp coconut oil, melted
  • 1/2 cup Desiccated Coconut
  • 1/4 cup mixed nuts, chopped up into small nibs
  • 1 Cup  Oats
Method: 
  1. Soak the pitted dates in a small bowl of boiling water for 15 minutes, or until soft.
  2. Add the dates, with 1 tablespoon of coconut oil to a blender, and blend until a sticky toffee forms. If the mixture is too dry, add a little bit of the dates’ soaking water until you reach a consistency you can work with.
  3. In a mixing bowl, combine the oats, sugar, coconut and nuts.
  4. Scrape in the date toffee and mix well. You may need to use your hands to knead the mixture until all the oats are coated in the toffee and the rawnola is crumbly.
  5.  Store in an airtight container. Enjoy with oat milk, as a smoothie bowl topping, or just eat it dry with a spoon!
