Apple & Cranberry Bircher Muesli

  • 1 cup HCW oats
  • 200ml nut milk
  • 100 ml 100% apple juice
  • 1/2 cup dried cranberries
  • 1 apple, grated
  • 1 pinch salt
  • Plain or coconut yoghurt (to serve)
  1. Add 1 cup of oats to a bowl and cover with the nut milk and apple juice.
  2. Mix in a pinch of salt and half the cranberries and place in the fridge overnight (8+ hours)
  3. In the morning, remove from the fridge and mix well.
  4. Divide into bowls and add a dollop of yoghurt (if using).
  5. Grate the apple and add to the top. Finish off by sprinkling with the remaining cranberries.
  6. Serve with a dusting of cinnamon, if desired.
